<p>preheat oven to 350</p>
<p>sift together 1 3/4 cup sifted all purpose flour  (or, 1 1/2 cups flour and 1/4 cup wheat germ.)<br />
2 1/4 teaspoon double acting baking powder<br />
(salt&#8211;I usually don&#8217;t add this.)</p>
<p>1/3 cup shortening<br />
2/3 cup sugar<br />
Lemon rind (i often don&#8217;t add this)</p>
<p>2 beaten eggs (can substitute egg whites)<br />
1 to 1 1/4 cup ripe banana pulp</p>
<p>nuts&#8211;optional</p>
<p>place batter in greased bread pan; bake the bread about one hour until done.</p>

				<content:encoded><![CDATA[<p>One large avacado, remove skin and cube.  Put in large bowl with juice of one lemon.</p>
<p>Several cloves of garlic, to taste;  Purple onion, to taste;  half of one fresh jalapena pepper, or less, according to taste.  Chop garlic, onion, and pepper finely, or use a food processor.  Add to bowl.</p>
<p>Two fresh and ripe tomatoes.  Cube in small pieces.  Add to bowl.</p>
<p>Using a fork, mix ingredients and mash the avacado further.</p>
<p>Serve fresh with corn chips, blue if available, preferably baked and low salt.  Or serve over a salad, chopped lettuce, cucumber, and sproated sunflower seeds.</p>
